4 tbsp chia seeds
4 cups almond meal
2 tbsp coconut flour
1 tsp baking soda
2 tsp cinnamon
1 cup shredded coconut
1 cup sultanas, goji berries, chopped dates
½ cup sunflower seeds
½ – 1 cup honey, to taste
1 tsp vanilla powder or 2 tsp vanilla extract
Preheat oven to 160°C.
In a small bowl mix chia seeds with 12 tbsp (3/4 cup) water, soak for 10-15 minutes.
In a large bowl mix dry ingredients, then add wet ingredients including chia seeds.
Line or grease baking tray 24cm x 30cm.
Press mix firmly into tray and bake until golden on top, about 20 minutes.
Allow to cool for 15 minutes before slicing if serving warm, or longer if serving cold.
Perfect as a slice on its own, or with toppings for breakfast or desert.
