1 tbsp coconut oil
1 onion, chopped
1 clove garlic, crushed
4-6 slices bacon, chopped
2 carrots, diced
2 leeks, sliced
2 zucchini, diced
2 tbsp tomato paste / puree
800g chickpeas – tinned or cooked, rinsed and drained
2 sprigs oregano, leaves only
In large pot heat oil, add onion on low heat for 5 minutes, stirring occasionally.
Add garlic, for 2 minutes, bacon further 2 minutes, stirring occasionally.
Add carrots and leeks for 10 minutes, stirring occasionally.
Add remaining ingredients, mix well and cover, simmering for 30-45 minutes.
Serve as is, or use stick blender to puree, as desired.
Season with salt & pepper.
