1 cup fresh medjool dates; or dried dates soaking in boiling water
2 cups desiccated coconut
2 tablespoons cacao
2 tablespoons chia seeds
1 tablespoon honey
2-3 drops food / therapeutic grade peppermint oil (or orange oil) – I use Young Living Essential Oils
Blend all ingredients, except oil, in food processor or blender until mixed well.
Add oil and blend for a further 10 seconds.
Line 20-ish cm square / rectangle tin or dish with baking paper.
Use fingers to press the mix evenly into dish.
Refrigerate for at least 1 hour before cutting into squares.
Store in the fridge in an airtight container.
