Easy Biscuits – grain, dairy and refined sugar free, can also be nut free
½ cup shredded coconut
½ cup sesame seeds
½ cup mixed raw nuts or pumpkin seeds (pepitas)
½ cup pitted medjool dates (5 or 6) – or any other dried fruit
2 tbsp boiled water
3 tbsp coconut oil, melted – or butter if dairy free not required
Remove pits from the dates and pour boiling water over them, allow to sit for a few minutes.
Put all ingredients in food processor, including dates and water, and pulse until forms a doughy ball.
Using wet hands, roll into balls and flatten slightly.
Put on lined oven tray and bake in moderate oven (180°C) for around 15 minutes, or until golden.
Enjoy warm or cold.
Note: these are also tasty as raw treats, just refrigerate rather than cook.
