3 cups (750ml) water
375g frozen green peas
1 tsp quality salt
1 tsp lime juice
3-4 tbsp fresh pesto (chilled section)
Perfect in a thermos for picnics or a day out.
Or serve hot (or cold) at home for an easy meal.
Put all ingredients, except pesto, in a saucepan and bring to a simmer for 7-10 minutes.
Use a stick blender in the saucepan, or pour into food processor, to puree with the pesto.
Pour into pre-warmed thermos or bowls, and enjoy.
Note: you can also add 2 whole (trimmed) spring onions to saucepan, but remove before blending.
