1 cup quinoa
2 cups nut milk or milk
1 tsp vanilla powder or extract
1 tsp cinnamon, or more to taste
1 cup berries
2-3 tbsp honey, or to taste
Quinoa is a protein rich seed, containing all essential amino acids, high in magnesium and is gluten free. It has a nutty taste, more often used for lunch or dinner, however this recipe is a nice change for breakfast.
Always rinse quinoa thoroughly before use to remove the saponin coating, a natural form of pest deterrent and bitter to taste. There is no need to soak, as the saponins can leach into the seeds.
Combine the quinoa and milk in a covered saucepan, and simmer for 15-20 minutes, stirring occasionally, until the seeds have a little white ‘tail’. Add remaining ingredients for 2-3 minutes, then serve.
You may also like to top with yoghurt or sliced banana.
