2 avocados, peeled & seed removed
2 tbsp coconut oil, warmed if solid
3 tbsp honey or maple syrup
½ cup cashews, soaked and drained
1 tsp balsamic vinegar
2 tsp vanilla extract or 1 tsp powder
3 tbsp cacao
Pinch sea salt
Blend all ingredients until smooth in a food processor, blender or thermomix, and spoon into bowls. Chill if desired. Top with blueberries, strawberries, peaches – or fresh mint.
Note: essential ingredients are avocado and cacao – all others are optional.
Frozen bananas can be used instead of avocado – different texture and taste but still very good.
